These limitations have held back data-driven roasting for\u003cbr\u003emany years. Our patent-pending infrared system solves this problem. Its low-flow, high-\u003cbr\u003epressure air barrier allows us to peer into the bean mass from inside the roaster, without the\u003cbr\u003eneed for a protective germanium glass. Because it is directly sensing the surface\u003cbr\u003etemperature of the beans, there is no thermometric lag.
