Meet Your Instructor: Morten Münchow
For Morten, it all started with an exceptional cup of coffee in 2002. That experience sparked a decades-long journey bridging rigorous scientific methodology with practical coffee roasting and sensory evaluation. Holding an MA in Biology and Philosophy—and having spent five years teaching research design and statistics to final-year medical students—Morten has become known for translating complex coffee science into practical, applicable systems for coffee professionals and enthusiasts alike.
Morten has:
- Taught coffee roasting at The London School of Coffee since 2007
- Developed and conducted barista training as the manager of Kontra coffee’s training center
- Developed SCAE/SCA’s Roasting Curriculum and served as part of its Education Committee
- Conducted peer-reviewed research and publications in scientific journals exploring cappuccino foam chemistry, roast defects, roast degree preferences, sensory science, consumer perception, and coffee quality evaluation
- Regularly consulted for a variety of different sized roasteries around the world, including in South Korea, United Kingdom, South Africa, Nicaragua, Bolivia, Iceland, Sweden, Greece, Italy, Switzerland, Austria, Singapore, Kuwait and Denmark
